I was desperate for a dessert one night. We had lots of very ripe bananas in the house and I didn't want them to go bad before we could eat them so I came up with a tasty treat that made a second appearance on our Easter table.
Toni's Banana Torte
Pre-heat oven to 350 degrees F
Mix your dry ingredients together:
1.5 cups of A.P. flour
1/2 teaspoon baking soda
1 dash All Spice
1 dash Nutmeg
1 dash Ground Ginger
1 dash Kosher Salt
1/3 cup of Granulated Sugar
Then add 1 egg, 1 cup of milk(I use rice milk) and 2 very ripe banana's sliced on the bias.
Pour batter into greased circular cake pan (8 or 9 inch) and bake for 20-30 minutes at 350.
Take out of oven and let cool for 2 mins. The longer this cools the more it will pull away from the sides of the baking dish making slicing and removing pieces much easier. Try this with a scoop of your favorite ice cream. I'm fond of French Van., but my son love Dulce de Leche
